Achiote Rubbed Tilapia

2 tbs.  Garlic Cloves, Peeled
1 1/2 tsp. Olive Oil/Canola Oil Blended 25/75
1 1/2 tsp. Cider Vinegar
1/8 tsp. Ground Cloves
1/8 tsp. Black Pepper
1/4 tsp. Ground Cinnamon
1/2 tsp. Dried, Crushed Oregano
1/2 tsp. Sugar
1 1/4 tsp. Achiote Seasoning
1 lb. Tilapia Fillets
6 oz. Green Peppers, Sliced Thinly
8 oz. Yellow Onion, Sliced Thinly
3/4 tsp. Olive Oil/Canola Oil Blended 25/75
Soft Corn Tortillas




Combine first nine ingredients, and set aside for marinade.

Thaw tilapia, and cut into strips. Combine with green pepper and onion slices, marinade and let sit for one hour.

Heat skillet to medium. Add ¾ tsp. oil mixture and cook tilapia and vegetables on one side for a few minutes. Stir fry until fish is cooked through, about 5 – 10 minutes. Serve hot, with soft corn tortillas.
