White Chicken Chili

 White Chicken Chili

Yields: 4 Servings
Total Cook Time: 15 minutes

 

Ingredients:
1/3 cup Vegetable Oil
7/8 cup Green Chili Peppers (Canned) Drained and Diced.
1 1/8 tbs. Cumin
1 1/8 tbs. Dried Oregano, Crushed
10 3/4 oz. Yellow Onion, Diced
1/3 cup Garlic, Peeled and Minced
3 3/4 lb. Cooked Chicken, Diced to 1/2” Cubes
10 oz. Canned Great Northern Beans, Rinsed and Rained.
1 3/4 quart Hot Water
2 3/8 tbs. Chicken Base
2 3/8 cup Skim Milk
1 1/2 lb. Cream
1 1/8 oz. Fresh Cilantro, Chopped

 


Directions:

1. Sauté onion, chilies and spices in oil for 5 minutes.
2. Add cooked chicken and sauté for 5 minutes.
3. Add beans and cook for 10 minutes.
4. Combine hot water, chicken base and milk in stock pot. Add chicken and bean mixture. Simmer for 30 minutes.
5. Add cream, simmer for 10 minutes.
